Dock Street Beer Ain't Nothing To Funk With – ABV 7%
We're all a product of our environment; we react consciously and subconsciously to countless stimuli on the regular. There's the obvious: temperature, light exposure, atmosphere; and the more complicated: rhythm, tempo, volume, etc. Beer is no different. To test this theory, we didn't funk around. This Golden Saison made its way into a red wine barrel in a cool section of the brewery where the only sounds to be heard for six months were from a 24/7 loop of Wu Tang Clan’s music via custom-fit, house-made ‘headphones.’ The addition of Brettanomyces B & C (these are wild yeast strains not new clan members) changed the game with a new level of tart and funk. Just like Wu-Tang Clan flipped hip-hop on its head, we want to challenge the way craft beer is made and appreciated. Depending on who you ask, we're either stimulating or serenading this beer with the sounds and vibrations of hip hop's most iconic ensemble. We lean towards the latter.
Dock Street IPA – ABV 5%
Its light malt base leans toward a sessionable IPA. Heavily hopped in the late additions with Amarillo and Citra to bring forth huge hop flavor and aroma. Notes of citrusy tropical fruits will cover the nose and fill the palate.

Dock Street Doppelhopf Pilsner - 6.9% ABV 60 IBUs
Über Pilsner - We took the bones of a classic Pilsner and turned up the volume. This crisp and hoppy light-hued lager boasts a higher ABV than a traditional Pilsner, as well as hopping rates more in line with contemporary IPA's. Frequent hopping in the kettle with Palisade, Crystal, and Spalter Select contributes a bold hop flavor, while a heavy dry hopping with Cashmere, Palisade, and Crystal provides a brightly lemony, floral, and herbaceous nose.
Dock Street Dortmunder Export – 5.5% ABV 34 IBUs

Oaxaca-based artist Miguel Sanchez illustrated the label, centering on corn as a symbol of wealth, struggle and identity to the Zapotec communities of Oaxaca and all Mesoamerican civilizations. The puffer fish is a symbol of strength and self-protection. Sanchez also illustrated the label for Vicio Mezcal, Dock Street Spirits' award-winning mezcal. Serve with a lime and enjoy. ¡Salud!

For 19 months we aged the base for one of our house Double IPAs, King Juice, in stainless steel with a house-cultured blend of Brettanomyces until the beer was transformed into something entirely different. We then dry hopped heavily with Mosaic, Amarillo, and Ekuanot to compliment the aromas and flavors contributed by the Brett. The resulting beer is an indulgent wild ale, not overly tart but significantly funky with bold aromas of a strawberry-mango-pineapple smoothie and flavors of capri-sun summers and overripe fruit funkiness.
