While Tomato Lonsa is native to the Coastal Indian state of Maharashtra and has many different variations, our Aaji’s recipe lovingly simmers tomatoes with our family’s distinct blend of spices to create a unique balance of flavors. AAJI’S Tomato Lonsa comprises 5 spices (turmeric, asafoetida, fenugreek, mustard seeds, cayenne) in addition to chili peppers, curry leaves, salt and jaggery. The very special proportion of spices and how they are incorporated into the cooking process help deliver our Lonsa's rich and unique flavor.
